INGREDIENTS:
½ cup quinoa

1 small jalapeno pepper minced

2 tbsp finely chopped green onion

2 tbsp olive oil

1 tbsp fresh lime juice

¼ tsp salt

¼ tsp cumin

¼ tsp chili powder

1/8 tsp Mrs Dash

PREPARATION:
Place quinoa in fine mesh strainer rinse well under cold running water. Combine quinoa and 1 cup water in small saucepan; Bring to a boil over high heat. Reduce heat to low; cover and simmer 12-15 minutes or until quinoa is tender. Drain, Cover, let stand 5 minutes. Stir jalapeno, green onion, oil, lime juice, salt cumin, chili powder and Mrs Dash into quinoa. Fluff mixture with fork. Serve warm or at room temperature.
